Lemon Bars

Crust

1 1/2 Cups Flour
1/2 Cup confectioners' sugar
3/4 Cup unsalted softened Butter

In a medium bowl, mix thoroughly.
Pat mixture into 9 inch x 9 inch pan.
Bake at 350 degrees for 25 minutes

Filling

3 Eggs
1 1/2 cups granulated sugar
1 tablespoon flour
3 tablespoons fresh lemon juice
1/8 teaspoon grated lemon rine
Confectioners' Sugar

In a medium bowl, beat eggs well. Set aside.
In a medium bowl, sift sugar and flour and add to eggs.
Stir in lemon juice and rine.
Pour over butter crust and bake at 350 degrees for 20 minutes.

Afer you remove it from the oven, dust with Confectioners' sugar.

Cut into squares but continue to let cool in pan.
